Executive Chef Gerardo Viejo said, “This new menu reflects a more intentional and ingredient-driven approach to dining at The Restaurant. We wanted to create a format that gives guests the freedom to explore the menu in their own way while showcasing the precision, seasonality, and coastal character that inspire our kitchen every day.”

The new Strawberry Lychee and Cream dessert is a refreshing celebration of summer, balancing a lychee strawberry compote with strawberry vanilla panna cotta, fresh berries, citrus almond crumble, lychee candy and whipped cream for delicate tropical notes with a light and elegant finish. Chocolate lovers will find plenty to celebrate in The Coconut  dessert, inside the chocolate coconut is coconut chiffon, toasted coconut ganache, coconut caramel Bavarian cream for a rich creation that combines silky chocolate with creamy coconut for an indulgent finale. Dessert is by pastry chef, Erin Breton who started out as a fine arts and biology major who realized she loved baking themed cakes and went back to school at the Culinary Institute of America for pastry and baking.
